01.Dickeys (airport)
Had to get it started at 8am with a quick airport stop in Dallas.
This had to be a piece from the prior day, considering what the next brisket looked like below. Of course, I didn’t know they used full brisket, having only seen this pulled outta the oven. He scraped away lots of the fat and I figured this would taste good. Something I said about “is this what you normally serve?” clued him in and he basically scapped this whole piece. As much as I hate to see anything wasted, I was glad… cause I asked for a slice he was tossing and it was absolutely terrible. How can juicy, fatty point meat taste so yucky? MAN, I would have been ticked had I got a plate of that.
