12.Up In Smoke
I really needed to pee on the way down to Temple TX, so we hit a dark exit ramp. Light up ahead was a roadside joint. We laughed that it was a BBQ place so I said I’d get a half a pound while Cyndi took the obligatory photo. I went in for the restroom and the lady was cutting brisket. I asked for a slice and had a REAL CLOSEUP look at it on the cutting table. Not a hint of smoke ring. Was wrapped in ceran wrap. Point and flat together. She gave me a taste and I knew it wasn’t even worth buying any. Came out and Cyndi was there and I hurried her outside and we were outta there. Even 5 mins later the taste in my mouth was nasty… just greasy film and not even beef. Compare this back to our first brisket on the “Trail” at Taylor Cafe and its night and day.
