16.Bill Miller

These guys get a really bad rap from the “real BBQ joints”. A guy at Southside market basically said they HAD to boil all their meat to service their large # of locations in San Antonio. The have a big commissary near downtown and centrally smoke their Brisket.
Initially I was served chunks of thick point meat, but I told them I wanted thin sliced lean. Out came a nice tasting (but the lady shouted “super thin” - and I might have said “really thin”) but very thin and crumbly brisket… but it was still good.

Sure, I grew up eating at Bill Miller BBQ… a TON of it, but we enjoyed the sausage and brisket and I’d def. make sure I had a stop at Bill Miller on my next trip back home to SA.
